Tender lamb chops cooked quickly and finished with a bright lemon butter sauce.

# Ingredient List:

→ Lamb

01 - 8 lamb chops (about 1 inch thick, approximately 1.3 pounds total)
02 - 1 tablespoon olive oil
03 - 1 teaspoon kosher salt
04 - ½ teaspoon freshly ground black pepper
05 - 1 teaspoon garlic powder
06 - 1 teaspoon dried rosemary

→ Lemon Butter Sauce

07 - 3 tablespoons unsalted butter
08 - 2 cloves garlic, minced
09 - Zest of 1 lemon
10 - 2 tablespoons freshly squeezed lemon juice
11 - 1 tablespoon chopped fresh parsley

# How to Make:

01 - Preheat the air fryer to 400°F for 3 minutes before cooking.
02 - Pat the lamb chops dry with paper towels. Rub both sides with olive oil, kosher salt, black pepper, garlic powder, and dried rosemary until evenly coated.
03 - Arrange the seasoned lamb chops in a single layer in the air fryer basket. Cook for 6 minutes, then flip and continue cooking for another 4–6 minutes for medium-rare doneness. Adjust time based on thickness and desired doneness.
04 - While the lamb cooks, melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in lemon zest and juice, then remove from heat and fold in fresh parsley.
05 - Remove lamb chops from air fryer and let rest for 3 minutes to allow juices to redistribute. Drizzle with the warm lemon butter sauce immediately before serving.

# Expert Tips:

01 -
  • The air fryer creates this gorgeous crust while keeping the inside perfectly tender, almost like restaurant quality without the restaurant price tag
  • That lemon butter sauce is the kind of finish that makes you want to lick the plate, and it comes together in literally five minutes flat
02 -
  • I once skipped the resting step because I was impatient and the juices ran all over my cutting board instead of staying in the meat where they belong, lesson learned
  • The lemon butter sauce tastes completely different if you add the parsley off the heat versus cooking it with the garlic, the fresh bright flavor comes through so much better
03 -
  • If you can find them, frenched lamb racks look extra impressive for dinner parties and cook exactly the same way
  • Bring the meat to room temperature for about 20 minutes before cooking, I noticed a huge difference in even cooking when I started doing this
