Crispy sourdouth filled with BBQ chicken and melted cheese blend

# Ingredient List:

→ Chicken & BBQ

01 - 2 cups cooked chicken breast, shredded
02 - ½ cup BBQ sauce (your favorite variety)

→ Bread & Cheese

03 - 8 slices sourdough bread
04 - 8 slices sharp cheddar cheese
05 - 4 slices mozzarella cheese

→ Butter & Extras

06 - 4 tbsp unsalted butter, softened
07 - ½ small red onion, thinly sliced (optional)
08 - ½ cup pickled jalapeños, drained (optional)

# How to Make:

01 - Toss shredded chicken with BBQ sauce in a medium bowl until evenly coated.
02 - Lay out bread slices and butter one side of each. Place buttered side down. Layer 1 slice cheddar, BBQ chicken mixture, onion slices, jalapeños if using, 1 slice mozzarella, and another slice cheddar. Top with second bread slice, buttered side facing out.
03 - Heat large skillet or griddle over medium heat. Cook sandwiches for 3-4 minutes per side, pressing gently, until golden brown and cheese is melted.
04 - Cut sandwiches in half and serve hot.

# Expert Tips:

01 -
  • The way the sharp cheddar cuts through the sweet BBQ sauce creates this incredible sweet and tangy balance that makes your eyes widen a little
  • Using sourdough instead of regular bread gives you that perfect crunch that holds up against all that melty, messy filling
02 -
  • Low and slow heat is your friend here, cranking up the burner will burn the bread before the cheese has time to melt properly
  • Letting the buttered bread sit for a minute before cooking actually helps it crisp up better than cooking immediately
03 -
  • Use a cast iron skillet if you have one, it creates the most gorgeous even crust I have ever seen on grilled cheese
  • Weigh down your sandwiches with a second heavy pan while cooking for restaurant style pressing and maximum cheese coverage
