# Ingredient List:

→ Fruit Base

01 - 1 ½ cups fresh strawberries, hulled and halved
02 - 2-3 tablespoons honey or maple syrup
03 - 2 tablespoons fresh lemon juice

→ Gelatin Mixture

04 - 3 tablespoons unflavored gelatin powder
05 - ½ cup cold water

# How to Make:

01 - Combine hulled strawberries and lemon juice in blender. Process until completely smooth, scraping down sides as needed.
02 - Transfer strawberry puree to small saucepan. Whisk in honey or maple syrup until fully incorporated.
03 - Sprinkle gelatin powder over cold water in small bowl. Let stand 3-5 minutes until mixture thickens and absorbs liquid.
04 - Heat strawberry puree over medium-low heat for 2-3 minutes until just warmed through. Do not allow to boil.
05 - Add bloomed gelatin to warm strawberry mixture. Whisk continuously for 2 minutes until gelatin completely dissolves and mixture is smooth.
06 - Pour mixture into silicone gummy molds or parchment-lined 8-inch square baking dish. Refrigerate minimum 2 hours until completely firm.
07 - Remove gummies from molds or cut into bite-sized pieces. Store in airtight container in refrigerator up to 1 week.

# Expert Tips:

01 -
  • These taste nothing like the artificial store bought version the strawberry flavor actually pops
  • You control exactly what goes into them no mystery ingredients or weird aftertastes
02 -
  • Never let your strawberry mixture boil or the gelatin will lose its setting power and you will end up with syrup instead of gummies
  • Silicone molds make everything easier but if you use a baking dish let them set completely before trying to cut them
03 -
  • Lightly spray your silicone molds with a tiny bit of coconut oil before pouring to make popping them out effortless
  • Super ripe strawberries are naturally sweeter so you might need less honey than the recipe calls for
