# Ingredient List:

→ Base

01 - 1 cup rolled oats (certified gluten-free if needed)
02 - 1 cup finely grated carrots (about 2 medium carrots)
03 - 3/4 cup raw walnuts
04 - 1/2 cup unsweetened shredded coconut
05 - 1/2 cup pitted Medjool dates (about 6-7 dates)

→ Flavor & Binding

06 - 1/4 cup pure maple syrup or honey
07 - 1 tsp vanilla extract
08 - 1/2 tsp ground cinnamon
09 - 1/4 tsp ground ginger
10 - 1/8 tsp ground nutmeg
11 - Pinch of salt

→ Optional Mix-ins

12 - 1/4 cup raisins
13 - 1/4 cup chopped pecans or walnuts

# How to Make:

01 - Combine oats, walnuts, and shredded coconut in a food processor. Pulse until finely chopped into a coarse meal consistency.
02 - Add pitted Medjool dates to the processor. Pulse again until the mixture becomes crumbly and dates are well distributed.
03 - Add grated carrots, maple syrup, vanilla extract, cinnamon, ginger, nutmeg, and salt. Process until the mixture begins to stick together when pressed between your fingers.
04 - Transfer the mixture to a mixing bowl. Fold in raisins and additional nuts if using, ensuring even distribution throughout.
05 - With slightly damp hands, roll tablespoon-sized portions of the mixture into balls, applying gentle pressure to hold shape. You should form approximately 18 bites.
06 - For added texture and presentation, roll the finished bites in extra shredded coconut to create a decorative coating.
07 - Refrigerate the bites for at least 30 minutes before serving to allow flavors to meld and texture to firm up.

# Expert Tips:

01 -
  • Theyre suspiciously close to actual cake but you can make them without any baking at all
  • The spices hit just like grandmas version but with ingredients you can feel good about
02 -
  • The mixture might seem too dry at first but keep processing, the carrots release moisture as they break down
  • Wet your hands between rolling every few bites or the mixture will start sticking to your fingers like glue
03 -
  • Use the finest grater you have for the carrots, larger shreds make the mixture fall apart
  • If the mixture won't hold together, add another teaspoon of maple syrup and pulse again
