03 - Pat turkey breast dry with paper towels. Place on the prepared sheet pan and rub the herb mixture evenly over all surfaces of the meat.
04 - In a separate bowl, toss halved potatoes, sliced carrots, and onion wedges with 1 tbsp olive oil, ½ tsp salt, and ¼ tsp black pepper until evenly coated.
05 - Arrange seasoned vegetables around the turkey breast on the sheet pan, ensuring everything is in a single layer for even roasting.
06 - Roast for 45–55 minutes until turkey reaches an internal temperature of 165°F and vegetables are tender. Stir vegetables halfway through cooking time.
07 - Remove from oven and let turkey rest for 5–10 minutes before slicing. Serve with roasted vegetables and drizzle with pan juices.
